Pioneer Woman Meets Country Girl | Lasagna

My girls had this fabulous idea....
I got them all the
They all thought it would be super fun to pick a recipe, every week, from the book and all of us cook it and then blog about it. They want to call it The Pioneer Woman Meets Country Girl.
Lauren said... "I thought it would be like we were all doing something together.
Add in PW and a little butter and everyone is happy!"
This week we chose LASAGNA

Heather, Ashley and her children came home for the weekend..
we wanted to do something fun... together.. so ...

Heather and Ashley went to the store and picked up all of the ingredients..

I stayed home and played with my grand kids... it was a very tough job but someone had to do it...

Then we started cooking.... even EMBER got to help!!

In a large skillet or saucepan, combine ground beef, sausage, and garlic.
Cook over medium-high heat until browned.
Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt.
After adding the tomatoes, the sauce mixture should simmer for 45 minutes
while you are working on the other steps.

In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan,
2 more tablespoons parsley, and 1 more teaspoon salt. Stir together well. Set aside.

Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary.
Spoon half the cottage cheese mixture over the noodles. Spread evenly. Cover cottage cheese with a layer of mozzarella cheese. Spoon a little less than half the meat/sauce mixture over the top.

Repeat, ending with meat/sauce mixture. Sprinkle top generously with extra Parmesan

It looks and smells YUMMY!!!!

Either freeze, refrigerate for up to two days, or bake immediately:
350-degree oven for 20 to 30 minutes, or until top is hot and bubbly.

We covered our Lasagna tight with Foil and
put it in the FREEZER....

Heather, Ashley, Jayson and the kiddos will enjoy their Lasagna dinner in
Cedar City sometime this week...

Stan and I are hoping Justin and Missy
and hopefully several others will come over for dinner this week!!

I will let you know if it tastes as good as it smells...

Station 23 Grandkiddo Visit

Grandkiddo day at the Fire Station with Papa Stan

My husband, Stan has been an Engineer/Fireman at
 Station 23 for TWENTY years

He is transferring to work at the Fire Station at McCarren Airport

The Fire Station is out in the middle of the runways
so there will not be any more family visits

Lauren and her 5 children: Estefan, Allie, Mark, Luke and John

and

Ashley and her two children: Ty and Ember

and I went for a last visit and tour of the fire station

They all love to try on Papa Stan's Turnouts

and of course ride/sit in the Fire Engine
with the sirens and lights flashing

and of course... the blue rubber gloves are always a hit

I am really glad that the Grandkids got one last visit in

Some of them won't remember that Papa Stan is a fireman..
but some of them I hope will always remember their trips to the fire station

Lauren was only 6 months old when Stan got hired on the Fire Department...
that seems like so long ago... but it sure went FAST!!

I LOVE MY FIREMAN!!!
Stan, Thanks for the fun day at the Station!!
We all love you to the MOON and Back!!
